I'm always playing in the kitchen, creating meals with whatever is in the fridge or on hand - and I don't do the best job of writing down the recipes I'd care to replicate - this soup being one of them, so I thought I'd write it down...
Ingredients
1 Yellow Onion (small/medium)
4 Cloves Garlic
5-6 Sprigs of Tyme
1 Bag of Tuscan Kale ( I like the kind from Trader Joes)
2 Cans White Northern Beans
1 Bag Shredded Carrots (I like the ones from Trader Joes)
1 Can Fire Roasted Diced Tomatoes
Seasoning to taste
1 Box Low Sodium Chicken Broth
In a large pot, saute one small/medium yellow onion, after a minute add chopped garlic. After onions are clear, add the bag of kale with the chicken broth and additional water if needed to cover all of the kale.
In a separate pot add 1 can of the Northern Beans with some chicken broth or water. Once soft mash the beans till you get a thicker consistency.
Return to the pot of kale, onions, and garlic and add the can of fire roasted diced tomatoes, along with the second can of Norther Beans. Add the mashed beans from the separate pot along with a handful or two of the shredded carrots and add additional liquid if needed to cover all ingredients in the pan. Let simmer for 15-20 minutes.
Add salt and pepper to taste along with any other seasonings desired. I used a tuscan Italian spice along with red pepper. Top with the tyme, and let the whole pot simmer till desired consistency.
Ready to eat! I like to eat mine with chunks of tuscan Italian bread, sprinkled Parmesan cheese, and some hot sauce. mmmm, mmmm, mmmm!
